The 'Merry Muddler' is filled with satsuma juice, sharp lime and a splash of vodka; all topped with deliciously dry Cava.
- 50ml vodka
- 2 peeled satsumas
- 2 lime wedges
- 20ml mulled wine syrup (available at Waitrose; see 'Tips' to make your own)
- Cava (here Freixenet Cordon Negro is used)
- Muddle the vodka, satsuma pieces and lime wedges, drizzle on the mulled wine syrup, stir, and top with crushed ice and Cava. Finish with redcurrants and dust with icing sugar.

To make your own mulled wine syrup, put 250g golden caster sugar, 800ml water, 4 cinnamon sticks, 10 juniper berries/cranberries, 8 whole cloves, ¾ teaspoon grated nutmeg, 1 star anise and 1 sliced orange into a pan. Slowly bring to the boil, stirring until all the sugar has dissolved. Allow to gently cook for around 10 minutes, then cool. Once cooled pass the mixture through a sieve and bottle. (You can also add orange liqueur to the mix if you want). This will make enough syrup for a drinks party.
