Buttermilk Pancakes

Ingredients

  • 125g of plain flour
  • 1 teaspoon of salt
  • 1 teaspoon of bicarbonate of soda
  • 1 egg
  • 250ml of buttermilk
  • 50g of butter, melted

Method

  1. Preheat and lightly grease a large frying pan
  2. Mix the flour, salt and bicarb together in a bowl
  3. Add the egg, buttermilk and butter, but keep it lumpy as the batter should look thick, spongy and puffy
  4. Drop 5 tablespoons (75ml) of the batter onto a pan, spreading lightly with the bottom of the spoon
  5. Cook until lightly-browned on each side, 1 to 2 minutes per side
