Fattouche - Healthy & Easy Recipes


  • 2 pitta breads
  • 1tbsp olive oil
  • 1 romaine lettuce
  • 1 red onion, finely sliced
  • 4 radishes, sliced 
  • 200g (6½oz) cherry tomatoes, halved
  • 1 cucumber, peeled and diced
  • 1 red pepper, finely diced
  • 4tbsp flat-leaf parsley, roughly chopped
  • 4tbsp mint, roughly chopped
  • 1tbsp ground or crushed sumac



  • Juice ½ lemon
  • 1tsp runny honey
  • 3tbsp extra-virgin olive oil
  • 1tsp harissa paste
  • 1 garlic clove, crushed
  • 1tsp ras el hanout (optional)


  1. Split the bread in half, brush with olive oil and grill until crisp.
  2. Slice the lettuce into 1cm (½in) strips and place in a large bowl with the onion, radishes, tomatoes, cucumber, red pepper, parsley and mint. Season well. Sprinkle the sumac over the top, then drizzle with a little olive oil. Toss well and set aside for 10 mins.
  3. Combine the dressing ingredients in a small screw-top jar and shake. Lightly dress and toss the salad. Break the bread into pieces and mix through.
