Tuscan Potatoes With Rosemary

Ingredients

  • 1kg (2lb) Desiree potatoes, scrubbed
  • 4tbsp olive oil
  • Sea salt and freshly ground back pepper
  • 1 head garlic, cloves separated
  • 4 sprigs fresh rosemary
  • Finely grated zest 1 lemon

Method

  1. Heat the oven to 200°C (gas mark 6). Cut the potatoes into chuck and add to a roasting tin large enough to hold them in a single layer. Pour over the olive oil and season well with sea salt and black pepper. Mix well and roast in the oven for about 40 minutes, shaking the pan occasionally.
  2. Stir in the garlic and rosemary, then return to the oven and continue to cook for a further 20 minutes, or until golden. When cooked, stir though the lemon zest. Mix and add extra seasoning, if needed.

Tip

There is no need to peel the potatoes, especially if you use a variety like Desiree (which only need a scrub). Depending on your menu and preferences, you can stir in some roughly chopped black olives before serving.
